Most of the spirits we consume today are produced from grains, as they contain high levels of easily converted sugars. St. Patrick’s have chosen potato as the alcohol base for our Vodka and Gins because of its unique natural sweetness, and its amazing versatility. As potato has just 20% available dry starch matter, this makes the process much more expensive, but more than compensates for the extra time and effort with its unique taste, aroma and smoother mouth-feel. Using small batch artisanal methods, they produce a 100% Potato Vodka and a variety of Potato Gins. The added bonus of a grain free distillation is that it’s also naturally gluten free. For whiskey lovers and connoisseurs, they also offer St. Patrick’s Distillery Oak Aged Irish Whiskey. Distilled, matured, blended and bottled in Cork.

Toons Bridge Dairy is situated in West Cork and produces Mediterranean and especially Southern Italian cheeses. We work with buffalo, cow and sheep milk to produce a wide selection of traditional artisan cheeses. Our head cheese maker Franco is fourth generation buffalo mozzarella casaro from Capua, to the North of Naples, the most traditional area of buffalo mozzarella production in Italy. Originally famous for our buffalo mozzarella, we now also make buffalo ricotta and feta. We have collaborated with a local sheep’s milk producer and now produce pecorino and ricotta. Toons Bridge Dairy products are available in a burgeoning list of good food shops, farmers markets and have been used by many of the top restaurants in the country. We are a small artisan producer and what we lack in size, we make up for in passion. We have a simple ambition and it is to produce a healthy, light and refreshing alternative to high sugar or artificially sweetened soft drinks. Our hand crafted water kefir drinks are produced in small batches in the Chocolate Factory, in the heart of Dublin. Water kefir is a live culture fermented beverage which is teeming with beneficial and gut friendly bacteria and yeast. We use market fresh, organic and fair trade ingredients and our drinks are sweetened using the extract from the stevia plant. Our drinks are gluten free and dairy free and are suitable for vegans and diabetics. Each bottle takes approximately three weeks before it’s gentle fizz is ready to be enjoyed.

In recent times we’ve seen bitters appearing more and more across a range of culinary avenues – added to unconventional drinks, drizzled on desserts and included in all sorts of dishes.

In our how to make your own bitters workshops we begin with a brief background of bitters, some interactive experiments, and a tincture tasting, so you can learn how to make and use bitters in cocktails, non-alcoholic drinks and in cooking.

You will learn basic formulas, tools, and processes for making bitters from botanicals including orange peel, cardamom, gentian, cascara, wormwood, hibiscus and cocoa.

Off the Cuffe, a bitter solutions company, was set up by Jarrod Cuffe and Barry Gargan earlier this year to create bitters in Dublin City.

We aim to source all Irish ingredients and recreate ancient Irish recipes that have been long forgotten to the winds of time, that can claim to aid in digestion, increase clarity of the mind and build fortitude of the body (or just make a seriously tasty drink).

Tickets for workshops will be available for purchase from the weekend craft shop at the Chocolate Factory.
